Who Should Attend: Parents, patients, physicians, and other health care workers with an interest in gastrointestinal problems such as ulcerative colitis, Crohn's Disease, Celiac Disease, chronic diarrhea and Inflammatory Bowel Diease (IBD). Ms. Gottshall will also present updated information in regards to autistic enterocolitis.

Conference Overview: Elaine Gottschall received a bachelor's degree in biology at Montclair State College, Montclair, NJ in 1973, and that same year began graduate studies in nutrition at Rutgers, the State University of New Jersey. In 1975, Ms.Gottschall moved to Canada where she earned a master of science degree from the Department of Cell Science at the University of Western Ontario's Zoology Department. Her main interests have been the effect of food on the functioning of the digestive tract, as well as on behavior. Many children with autism also have pathology of the gastrointestinal tract. Thus, the digestibility and absorption of most food is impeded, especially certain forms of carbohydrates. This results in an intestinal environment that supports overgrowth of intestinal yeast and bacteria, along with products they produce. By introducing The Specific Carbohydrate Diet, the patient can be maximally nourished without over-stimulation of the intestinal microbial population. Ms. Gottschall has spent many years consulting on inflammatory bowel disease problems and is the author of the book: Breaking the Vicious Cycle: Intestinal Health through Diet.
